If you’ve been following me on Instagram, you would have noticed my annoying posts, countdown to the opening of my brother’s food business in the, MCO Chill & Grill.
To give you a brief background, MCO Chill & Grill was first established by three Thomasian BS Entrepreneurship students, including my brother, Kevin. As part of their curriculum, they were required to come up with a feasible business that will serve as their thesis; however, unlike most dissertation with paperwork, their prototype had to operate an actual business.
MCO Chill & Grill is a barbecue joint that offers grilled pork, chicken or fish meal served with a cup of java rice and mixed vegetables. This kind of food business is actually common in the Philippines, but what makes it unique is that their menu was influenced by my mother’s special barbecue recipe. They also offer Mom’s famous baked macaroni which was the same specialty we’ve had on special occasions such as birthdays, Christmas and New Year’s Eve for as long as I can remember. Her recipe not only remained the same, but has improved over the years.
My brother had been encouraging our mother to get into food business since he was a kid, but Mom knew how extensive and time-consuming this kind of obligation is, so she kept on dismissing on the idea. My brother’s choice of career finally led her into submitting to his long-time plea, thus the birth of MCO Chill & Grill. His two business partners eventually broke away due to their respective personal commitments, hence MCO Chill & Grill was left to my brother’s management. The rest, so they say, is history.
On 18 May 2014, my brother opened his first branch of MCO Chill & Grill in the South. The very first branch was actually located in Concepcion St. in Manila, just a stone’s throw away from UST, but it was only a kiosk that offered take-outs and deliveries to to customers (mostly students) on-the-go. This branch in Las Piñas was his first that will cater to customers who wish to dine in as well. He also included flavored milk shakes—chillers—to its menu, hence the business name.
