Yes, you read that right, my friend! I cooked lunch today. Of course, I do not expect you to believe this, but I really did it. It’s a no-brainer recipe, and it may not entirely be the most appealing meal anyone would want to have at any given time or day, but I would rather have this than starve.
I had to take Mom to the store this morning because my youngest brother went to an early morning call-time for a sideline today. When he got back just before lunch time, he fell asleep instantly. Mom was unable to cook lunch for us because she pulled an all-nighter last night, preparing the ingredients for this week’s supply of baked macaroni. My younger brother, who has more potential in the kitchen than I am, sleeps in until 3:00PM everyday, so I had no choice but to do it myself. I actually learned this particular recipe from him because he knows that I don’t eat luncheon meat that’s simply heated from the microwave. Well, desperate calls for desperate measures!
- 1 can of SPAM® Less Sodium luncheon meat
- 1 medium egg
Whisk the egg in a small bowl while pre-heating the pan smeared with no more than a teaspoon of oil. Cut the luncheon meat into thin slices (or depending on your preference). Dip each slice into the beaten egg mixture, then place it onto the pan to fry. Cook each side until golden brown. Allow excess oil to seep through a paper towel or two, then serve.
Yield: approx. 12 slices for 3 to 4 persons
There goes our easy-to-cook lunch! I know I could have come up with something better, but I still consider this my proud moment. (Though my husband won’t admit it, I know he’s proud of me, too. Ha! *hair flips*) When all else fails, order in.
